In the fall of 2024, the first kick-off was made at the two-day autumn fair in Kuressaare, where we got our first real experience. Before that during the summer, we prepared a menu of pastries and pies, for which we tested all the products before they went on the menu. Several friends and acquaintances tried the trial products. The selection consisted of three savory pies and three sweet pastries. There was still a lot of preparation that went into setting up the work station. For example, we purchased an oven, a proofing cabinet, a workbench, a refrigerator and various small appliances.
We made the filling for the pie from chanterelles we picked from the forest with our own hands. The autumn fair took place on September 6th – 7th in the area surrounding the Cultural Center of Kuressaare. The day before, we set up a tent at the fairgrounds in cooperation with the guys from OÜ ,,Saaremaa Peotelgid” – they enabled us to rent the tent and helped setting it up.
On the day of the fair, we woke up early to set up our outdoor kitchen and started making pie fillings, pies and pastries. However, we also had some problems with the power supply – we hadn’t taken into account the cross-sectional area of the extension cord, and therefore we occasionally had disruptions with electricity, but we found a solution by pulling the plugs in and out from time to time to avoid overload. Another problem was the lack of baking trays. When we went to the fair, we thought that the fair days would be calm, but the reality turned out to be the opposite. We really didn’t expect so many customers. It was very positive that so many people decided to purchase from us and gave us the strength to continue with our endeavors. However, we are currently dealing with the problems that have arisen and are purchasing more baking trays for next season and getting better extension cords in order to bring you even more of our delicious pastries and pies.
